Hello, friends!Welcome to MengLong and Marui’s cooking show。Today ,we will show you how to make a special, traditional and ,of course, a delicious Chinese dish----(酸菜鱼)Boiled Fish with Pickled Cabbage and Chili!

Before we start, we need to be ready for the ingredients needed for today’s dish!The star ingredients of today are fish and pickled Chinese cabbage , the fish had better weight about 1 kilogram!You can chose any fish as you like, but today I would take carp for example.And as for the pickled Chinese cabbage we need about 250 grams.Also we need some other ingredient: one egg white, Some oil(about 40), and soup(about 1.25kg), salt, MSG, black peppers, peppers, cooking wine, ginger, garlic, and some chopped chilli.Now, got ready? Let’s get start!

1.first , let’s deal with the fish.First, we need to clean the fish and scrape the scales off the fish.Cut off the gill and open the abdomen of the fish, dig the viscera out and wash the fish.And then, remove the fish with a knife.Rive the head of the fish and cut the bone into pieces.And wash the Pickled Cabbage and cut into sections.2.Okay ,then we light the fire put the wok on it, add some oil to it and we put ginger, garlic slices and the pepper into it and keep stir-frying them.When it become flavourous, add the Pickled Cabbage and frying it.next, add the soup and the bones of the fish, boil it by high temperature fire.and add some cooking wine, salts and pepper into it.3.and then, Slice the carp with a knife.Next, add the salt, cooking wine, monosodium glutamate into the egg white and stir it into a paste, and then spread the paste on the fillets uniformly.4.now Boil the soup until it become flavorsome, and then put the fillets into the soup.At the same time, you need to pour the oil into the other pot and heat it up, and put the chopped chilli in the pot, then stir-fry the chopped chilli.When it become flavorsome, pours it into the pot and simmer the soup for one to two minutes.After some time when the fillets are cooked, sprinkle some monosodium glutamate into the soup.And finally, pour the soup into a large bowl.Then, all of the steps are finished!
